Conventional Cutting Boards

Avoid conventional cutting boards made with toxic material that end up on your chopped food!

Plastic: they are the worst of all, besides being not eco-friendly at all, plastic cutting boards could release and contaminate your food. with plastic particles, BPA, and phthalates. Since the cutting boards when wet create a bacteria habitat, they could contain the antibacterial chemical triclosan. 

Epicurean: these cutting boards are made with layers of recycled material such as wood, paper, resins and plastic then glued together. They are not one piece. The glue used and bacteria are the issues.

Mineral Oil: any cutting boards with mineral oil. Mineral oil (sometimes called liquid paraffin), is a blend of undisclosed ingredients. Made from petroleum sources and fossil fuels.

Toxic Glue: formaldehyde

Greenwashing Cutting Boards 

Avoid cutting boards made with controversial material: 

❌ Glass: the majority are made in China

❌ Stainless steel: heavy metal contamination could happen while cutting

❌ Bamboo: they are made with layers of grass glued together. They are controversial since we need to investigate their glue. It could be ok only if the bamboo has been grown organically and the glue used is not toxic and formaldehyde-free. For this reason, it is not my favorite and I prefer a cutting board with no glue at all.

Wood: the one-piece wood cutting board is the best option especially if the chopping blocks are made from FSC Certified wood plantations. They are one piece and they don’t need glue. Also, it needs to have a safe and non-toxic finish. Ideally locally sourced

Food grade Oil Finish: organic flaxseed oil,  organic carnauba wax, organic coconut oil, beeswax.

So what we want is a:

  • One piece of wood  thick, sturdy, and not slippery 

  •  No glue 

  • ✅ No mineral oil

  • ✅ Sustainable locally sourced solid wood

🌿TIPS for Cleaning and Maintenance: Avoid: Olive oil, corn oil, and sunflower oil, on your cutting board. These oils experience rancidification – a process that yields a rank smell and unpleasant taste. As a cutting board touches your food, substances that can turn rancid should be avoided. Food should always be tasty!

🌿Baking Soda: To remove stains from your organic cutting board, you can safely use baking soda. Sprinkle baking soda over the spot and rub with a cloth, brush, or sponge dipped in hot water. 

🌿Lemon Juice: To remove the smell, one of the easiest tricks is to cut a lemon in half and run it across the entire surface. The ascorbic acid in the lemon both reacts with and oxidizes organic material (bacteria and fats) that are the cause of smells and stains. The natural lemon oil also forces any soluble materials to be removed as well.
