Avoid Conventional broth brands; most commercialized broth isn’t made the traditional way in the kitchen; they are made with meat paste and water, which is very cheap to make; the product can be manufactured and delivered rapidly. The manufacturing process produces a large quantity of usable products with minimal waste or costs.
The FDA does not have specific regulatory definitions for ‘stock,’ ‘broth,’ or ‘bone broth.’
“Broth concentrate diluted with water” is the most common first ingredient in conventional broths.
The largest of the U.S. chicken broth manufacturers is Symrise; the second is Essentia Protein Solutions. Symrise, headquartered in Holzminden, Germany, listed sales of 3.83 billion Euros in 2021. Kerry Group is the third-largest company in terms of chicken broth concentrate sold to the United States.
Conventional chicken broth will list: “Chicken Stock, Salt, Natural Flavoring, Mirepoix (Carrots, Celery, Onions), Chicken Fat, Yeast Extract.”
❌ Chicken stock: Chicken stock and chicken broth are not the same thing. Chicken stock is made with clean chicken bones without meat because it is cheaper. It is low in gelatin and protein content.
❌ Chicken fat or animal fats: Sometimes added to provide mouthfeel and flavor, but may come from rendering less expensive trimmings or by-products
❌ Meat Paste: Produced industrially by cooking down chicken meat or broth concentrates extensively to form a concentrated paste, often shelf-stable and requiring water dilution before use.
❌ Cheap oils: Often neutral vegetable oils or blends added for texture or flavor extraction
❌ Yeast extract: A low-cost flavor enhancer common in conventional broths, providing umami notes similar to MSG.
❌ Fillers or concentrates: Some broths may include inexpensive additives like hydrolyzed vegetable proteins or concentrated broth powders that bulk up flavor inexpensively
❌ Brands: Progresso, Swanson, College Inn, Kitchen Basics, Good & Gather, Kirkland Signature, 365, Emeril’s are owned by larger parent companies like B&G, Conagra Foodservice, General Mills, Campbell Soup Company, and Del Monte Foods.
Avoid greenwashing broth made by brands that pretend to be organci, natural, better, or healthier when they are not. They will use their marketing trick to convince you to buy their product! They will add filters or cheap additives to make it cheaper or convenient for the production.
Even if it is USDA-certified organic, they will take these shortcuts:
The first and primary ingredient for most broths is a concentrated broth from a large third-party manufacturer, and the trick to telling this is the case is when the first ingredient reads “chicken broth” or bone stock with a list of other ingredients.
❌ Bone Stock: concentrated stock from a large third-party manufacturer.
❌ Chicken Broth: concentrated broth from a large third-party manufacturer
❌ Natural Flavor: “natural chicken flavor” or “natural beef flavor” commonly appears as added flavoring agents to cover up their shortcuts and not-so-tasty broth. These are often proprietary blends derived from natural extracts and concentrates to mimic real broth flavor without the cost of long cooking or expensive ingredients. These are not simply cooked broths but rather flavor enhancers used to supplement or mimic the taste of homemade broths.
❌ Sugar: there is no need, and it is inflammatory
They are made in the traditional way, using real food, no additives, or unnecessary fillers or shortcuts. They are made like they are supposed to in the kitchen using the traditional recipes and methods with healthier and nutritious ingredients.
Real organic bone broths are made from scratch with no concentrates, no preservatives, and no shortcuts. They are cooked for a longer time with real full meat and bones.
